Finnish Cardamom Cookies
History
This recipe has its origins in Finland and is a very tasty
dessert.
Its namesake ingredient is from India and is a member of the Ginger
family. I was first introduced to them many Christmases ago and since
then have had them every Christmas.
Recipe
- ½ cup butter
- ½ cup sugar
- 1 egg
- ¼ cup heavy cream
- 2 cups flour
- 2 tsp. baking powder
- ¼ tsp. salt
- 1 ½ tsp. cardamom
- Cream butter and sugar.
- Add egg and beat.
- Stir in cream.
- Sift flour, baking powder, salt, and cardamom and add to
the rest of the ingredients to make a stiff dough.
- Chill thoroughly.
- Shape dough into 1-inch diameter balls and place on baking
sheet.
- Bake at 375 degrees F for 10 -12 minutes. Makes about 36
cookies.
